Dinner! Cook a vegetable dish for your family and/or friends. Find a recipe that uses fresh vegetables (not canned) and create a log of your experience. You can leave it just a veggie entree to add to your family meal or you can serve it with meat, seafood and/or a healthy starch (couscous, whole wheat pasta, quinoa, etc). Please include photos of the food, if you can, and detail the process of making it: from going to the store, to chopping, to serving. Did your family and/or friends enjoy the dish(es)? Did you enjoy making it? What kind of physical activity was involved (walking to the store, chopping, etc).
Summarize your experience in at least 10 sentences. I've heard it's good to walk after a meal. Find some form of safe, light exercise to do after dinner for seven days (in a row or every other day). You can do light yoga, stretch, go on a walk with family/friends, dance, etc. Summarize your experience in 5 sentences.

My dad and I have been doing pushups for the past 7 days. My shoulders HURTZ. I think if I continue the same amount of pushups per day I will get strong!! >.< I might do sit ups. They workout my core while my push ups workout my arms. My legs are left out. Running?

If you do running ease into it by running only 1-2 miles a day or 6-8 miles a week but make sure to not over stress your legs. I do 20-40 Miles a week for 6 days so don't try this

Part One: I decided to make my family vegetable latkes, which was just made from all vegetables we had around the house. Vegetable latkes are a fried dish, which more or less undermines the healthiness of the vegetable, though it does make it better that it is entirely composed out of them. To make latkes, all you need is parsley, eggs, flour, onion, turnips, and carrots. It is really a pretty easy recipe, seeing as how you just put that all in a food processor, grind it to a chunky vegetable salad, and then fry it in a very large amount of olive oil. The result, as I, and my family, found, was a very satisfying dinner. Were I to have gotten these materials myself, I would have just walked over to the Fred Myers on NE 28th and Broadway, where my family shops anyways, to buy all of these materials at a much cheaper price. However, due to these things being necessary for pretty much everything else, as they were originally intended, I did not need to go to the store at all. Latkes were made originally as an oil based Kosher food, that you could make with all the remaining ingredients you had left from harvest, like onions, flower, and carrots, in the winter. By no means is this a fanciful dinner, but it is a seasonal one. I plan to cook a lot more latkes in the future, as they were particularly easy to make, and delicious. However, I was not able to catch a photo of them before they were already gone.

part 1: This week I wasn't as active as I usually am. I usually have a futsal game but it got canceled. I walked my dog a couple of times and took a walk with my family downtown to see all of the holiday decorations. But when I was on my trip to Florida over Thanksgiving I took a bunch of walks on the beach and I also ran my first 5K!

We already had all the ingredients so I didn’t really have to do anything except make the food. I think it turned out pretty good. My brother is picky so he didn’t eat any of it. My parents liked it but thought next time I should add less lemon to the zucchini.

This week, every day after school I played football with my friends. It was super beautiful outside this week. It was really fun because all of us got to play the sport we love to play. I also, on the weekends, I played football with my dad on the street. It was really fun. After dinner we were not able to go outside for walks because it was cold and windy and dark. I feel like I got my exercise in from playing football before dinner.

For dinner I made zucchini and a salad. My mom made some polenta to go with it. To make the zucchini I sliced it, sautéed it with garlic and lemon. The salad just has oil and vinegar and pecans on it.

I made green beans with bread crumbs, garlic, pancetta. They were good but next time I would have cooked the pancetta in a little more. my Grandma who happened to be in town helped me with grocery shopping. I made the dish by blanching the green beans in boiling water with some salt and cooked the diced pancetta in a separate pan. After the green beens were done I finely sliced the garlic and cooked it then added the bread crumbs. After every thing was done I put it all in the same pan and mixed it together. I worked out my fingers on my x box one then took my dog for a nice long walk. http://www.foodnetwork.com/recipes/food-network-kitchen/haricots-verts-with-pancetta-3362516

Last night I made for my family a dish of Peanut Fettuccine with Roasted Cauliflower. It took me about an hour to prepare, and my sister was picky, so she didn't enjoy it. It had cilantro and peanuts coated on the top, and tasted great! It was fairly inexpensive to shop for, when we wen to Winco. We had to to go to all different aisles of the store to find the stuff we needed. We also had a long way to go to get to the actual store. It was on 122nd and Halsey, so pretty far away from our house in NOPO. My step-dad helped me a little in the process to julienne the carrots, which was a little hard. He had to help me to stir the cauliflower in the oven, even though I could've done it myself. Most people in my family liked it, and I even had it in my lunch I liked it so much.

So I made a stir fry for my family. We walked to the store to pick up broccoli snap peas and chicken. I think my favorite part was cutting the veggies. It was really fun because I just like knives I don’t know why so my family ate it and my mom thought it was a nice balenced meal and the snap peas were perfect. I recently made a lentil salad. We mixed in ingredients like feta cheese, peas, olives, olive oil, and avocados, and it ended up tasting very delicious. My mom sometimes makes it for dinner, so it was nice to learn how to make it myself. We got most of our ingredients from stores like New Seasons and Trader Joes, and there isn't a lot of preparation when making it. You just add as much of each ingredient that you want, and you're good to go. I'd also like to add that I have been doing some stretches in the mornings and the evenings, plus some simple workouts since it really dreary outside.

I made a salad for my veggie dinner. The first step was deciding what ingredients to include. I decided on these ingredients, Lettuce, Tomato, cucumber, mushrooms, green onions. Then I go to the store and collect these things. When we got back to the house i put all the veggies under the sink to wash them. When i was done i started to cut the lettuce and then i put it in a big bowl. After that i sliced 32 cherry tomatoes and put them in. When i finished that i sliced and put the green onions in. after that that put the mushrooms in a egg slicer and sliced them then put them in. After that I sliced the remaining veggies and put them in. Then all that was left was the dressing and the spices. I dressed the salad with balsamic vinegar and olive oil. Then for the finishing touch i put some salt and pepper.

For my dinner, I cooked minestrone soup on Christmas Eve for a party my family had hosted. Though it included canned vegetables, it consisted of many freshly chopped ingredients (diced tomatoes, onions, celery, carrots, etc.) and is considered a very healthy dish. Though the recipe said to use green beans, my family used fresh zucchini which altered the instructions a bit. Making the soup was really fun. I got to spend time with my mom and learn all sorts of cooking techniques. At the Christmas party my soup was a great success! I got so many compliments and requests for the recipe. For the rest of the week I was inspired to eat healthy. Other than it being delicious, there was tons of fiber, antioxidants, and vitamin A, C and K.

Part 1: I chose to cook my favorite type of veggie-thing, Collard greens. They are basically just steamed but are really good. We didn't go to the store to find the collard greens but instead got them from a shipment from a company called Imperfect Produce. Imperfect produce is a company that sells produce and ships it to your door. But unlike other companies who only keep the perfect produce, Imperfect Produce takes different-looking ones as well. We have found some weird shaped potatoes and lemons before. The dinner that we had was combined with my sisters meals as well, making it a full dinner. The first thing that I did was wash the greens underneath the faucet. After that, I took each leaf and took the stem out of the whole thing, leaving two pieces after doing that for each one, I piled them on top of each other and rolled them into a bowl to chop them up. After cutting the greens, I diced garlic and put it in the bowl with the greens. I then took some olive oil and cooked everything together in a frying pan. My family enjoyed it, as it was our favorite green meal other than salad.

I made a broccoli dish for my family. First you cut the broccoli in to small enough pieces. Next you put down a piece of parchment paper on a cookie sheet and scatter the broccoli around. You drizzle olive oil over the broccoli and add some salt. Then you bake it in the oven. It takes 20 minutes at 400 degrees to finish. It was salty and delicious. My whole family also enjoyed it. I don’t normally like broccoli so found this recipe surprising.

I made lamb meatball and vegetable gyros on whole grain pita bread. My dad and I biked to the store to buy the ingredients. We bought a pound of lamb, cucumbers, tomatoes, yogurt, and the whole grain pita bread. When I make this, I usually don’t use whole grain, but I did this time because it was healthier. We also bought an onion and some fresh mint. To start, I sliced the onion and put it in a bowl with the lamb. I mixed in some spices, and set it aside. I pre- heated the broiler to 400, and started forming the meat into balls. When the oven was ready, I put the meatballs in and chopped the cucumbers and tomatoes. To make the tzatziki sauce, I mixed yogurt, mint, and a little cayenne pepper. Then, when the meatballs were done, I assembled the gyros. I have made these before, and my family loves them. I like making them too. Physical activity included chopping, mixing, and biking to the store. I chose to walk around the block after dinner. I felt less full afterward, so I think it helped with digestion.

I was tardy on the initial assignment of making a meal, but I have found time for light exercise on my breaks as well as weekly trips to the gym. I spend at least 45 mins a day exercising, and at least an 1 and a half hours on days I spend at the gym. I try to eat healthy and wholesome meals whenever I can, and refrain from eating to many snacks randomly etc.

For my dish I made a side of honey and balsamic roasted brussels sprouts. This dish is very easy to make and tastes really good as a side to carbonara pasta (my sister made as the main dish) The only things I had to buy were brussel sprouts, red onions, and honey. First was to toss the cut sprouts and onions with some olive oil, salt, and pepper. Second was to bake them while making a mix of balsamic vinegar and honey. Lastly drizzle the mixture onto the baked sprouts and I'm done. My sisters like the dish very much. I should've added a little more pepper but other than that it tasted good and is simple.

My sister, Willow, and I decided to make squash spaghetti together for our parents. All the ingredients were already bought, and since we live far away from any grocery stores and it was already dark out (it would take us nearly an hour to walk, and about 40 minutes to bike to the nearest New Seasons) we sadly would've just taken the car anyway. First we took a Spaghetti Squash, cut it in half, shoveled out the seeds and then put it cut side down in a pan with about a centimeter of water. We then put tin foil on top, that way when it cooked in the oven, the steam would make it moist. We then began making the spaghetti sauce. We took out a baking dish and took turns sautéing onions, garlic and beef in olive oil before putting in mushrooms and tomatoes. At the very end, Willow added some oregano, basil and cilantro. After the squash cooked for about half an hour, we took it out and Willow used a fork to scrape out it's guts, which made it look like spaghetti noodles. And boom! A delicious low-carbohydrate and vitamin filled dinner that is naturally sweet and doesn't stress out your pancreas.

The dish i made for my family was a skinny white enchilada. What makes this a skinny white enchilada is that I added more vegetables and instead of frying the chicken I poached it. The first thing we did was poach the chicken in chicken broth and water. Whilst the chicken was boiling in the broth I poured some of the enchilada sauce on the bottom of the pan. After the chicken was done boiling I let it cool down. While the chicken was cooing down i sauted a yellow onion and a bell pepper. After the chicken cooled down I shredded it. After being in the pan I put onion and bell pepper bits in a bowl. Put monterey cheese in a bowl. I got tortillas and put chicken, cheese, onion bits and bell pepper bits in the middle. I then put them in a line on the pan with enchilada sauce. Once all are in I put enchilada sauce on the top then put more cheese and onion bits and bell pepper bits with the sauce on top. Then I cooked them in the oven for 20 minutes at 400 degrees. For a week, after I ate dinner I would walk around my neighborhood to see what was happening. when I did this I noticed a lot of new things happening around my neighborhood. I noticed a lot of new painted houses. It was cool since all the new houses were painted differently. This exercise helped me walk longer distances without stopping

I made a caesar salad fro my family. I started with making the salad dressing by using olive oil, lemon juice, salt and pepper, fresh garlic and egg yolk. The most exercise I got from making the salad dressing is from squeezing the lemons to make lemon juice and the rest of making the dressing was mixing each of the ingredients. For our meal, (I had help from my dad,) we made fajitas, we put bell peppers and onions in a bowl and cooked them. Then we put the meat in to cook, then mixed the veggies and meat. We made sauce for the meat and veggies, we put extra chili powder on accident, so it was a little more spicy. the ingredients to the sauce are tapioca starch, chili powder, salt, paprika, sugar, onion powder, garlic powder, cumin and cayenne. It tasted really good when it was done and I think I will make it more often.

For my vegetable meal, I made a salad. This salad was mostly lettuce. The lettuce was iceberg lettuce that we got at Fred Meyer. Lettuce, on its own however, is boring. So we also added avocado. The avocado we already had at the house. I don't know where or when we bought it. To add some tang to the salad, we also put in two tomatoes that we got at Fred Meyers, with the lettuce. For dressing, we used salt, olive oil, and pepper. The salad made a good addition to our meal.

For the vegetable dinner I made all I used was zucchini squash, pepper, salt, dill, and olive oil. First you take your zucchini squash and you cut it in to 1/4's. Then you sprinkle it with dill, pepper, and salt. You then sprinkle oil all over your zucchini. Put the zucchini in a pan and put it in the oven at 400 degrees F and set a timer for ten min. Ounce done chop up the zucchini in to bite size pieces and eat up! I enjoyed making the zucchini and it was a fun/hard experience. Me and my Dad ate it for dinner and it was delicious and I look forward to making more dinner's for my family. It could have been baked for a little longer but it was still pretty good. Next time I will bake it for like 12 minutes.

For my meal, I prepared fish tacos for my family. We used fresh tilapia coated in a breading recipe that's been passed down in my family. I really loved preparing this meal because not only was it delicious, but it was also really healthy because of the fixings I made with it. I had a corn, rice, and tomato mixture made to use like a salsa on the tacos, and instead of using sour cream we used green yogurt. I would definitely say the meal was Mediterranean influenced. That week, every day after eating dinner I took my dog on a 20 minute walk around my neighborhood. I alternated between jogging and walking, and I really liked that it helped me fall asleep more quickly after I got home, and it also helped with digestion.
